Many, many years ago the dairy farmer was proud of his herd, and the quality of his milk. He may not have had an opinion, even, on whether or not processed milk was dangerous to your health, but he knew that the natural milk he produced and sold was one of man's best sources of protein and calcium. Gradually he was squeezed out of business by the "cow factories" -- industrial dairies that wanted to cover up the dirty milk, the infected cows, and the sour milk. These industrial dairies were eager to heat the milk to kill the germs they introduced through their factory production technology. When someone in the dairy industry watches the natural milk drinkers complain about the fact that natural milk is illegal, they chuckle. They can sit back, count their money, and pretend that it is the government that forces them to heat and chemically alter their milk. In fact, the truth is that the dairy factory industry has eagerly sought government control so that they don't have to worry about their dirty milk, infected cows and sour milk! So, when you see activists complaining about the horrors of current milk production, and complaining about the health damage done by drinking "milk," you must realize that these critics have no experience with natural milk -- so we can pick up their complaints, whether completely valid or not, and indicate that these charges against "milk" apply to processed milk -- and that natural milk is actually healthy and is NOT produced under the factory technology of the vast bulk of the current dairy industry.

The September 10, 1998 issue of this publication contained an interesting editorial on the inside front cover. I recognized one of the authors, Jerry Kozak, who was once employed by the Food and Drug Administration. In the early 1990s, Kozak was charged with the task of overseeing the use of antibiotics in milk. This government regulator was asleep on the watch, for under his command, FDA allowed one hundred times the previous existing level of antibiotics to be mixed into the milk we drink. One part per hundred million became one part per million. Consumers Reports tested milk in the New York metropolitan area and found fifty-two different antibiotic residues. Let's examine Kozak's current editorial: "ANTI-DAIRY CAMPAIGNS SHOULD BE TAKEN SERIOUSLY" by Tom Gallagher and Jerry Kozak Because milk has been a staple of the Western diet for thousands of years, we sometimes take for granted that consumers will always appreciate its safety and healthfulness. If we required any reminder of the need to defend dairy products, we have received it in the person of Robert Cohen, a New Jersey-based real estate developer who has engaged in a widespread dairy-bashing campaign. Many dairy producers are aware that Cohen is promoting his recently published book "MILK: The Deadly Poison." Cohen has demonstrated an ability to take his allegations and spread them to the public through the Internet and through appearances on local radio and television programs. His efforts are evidence of two unfortunate trends we, no doubt, will see more of in the Information Age. The first trend is that, thanks largely to the Internet, a person can establish a site from which he or she can disseminate outrageous claims, and not much can be done. The second trend is that a growing number of news media outlets no longer engage in much fact checking or substantiation before they give a person airtime or space. Cohen has claimed that the USDA, FDA and this magazine all had misrepresented the findings of a 1997 USDA research study (SEE: http:// www.notmilk.com/deb/062898.html) which confirmed the effectiveness of conventional pasteurization in destroying the bacterium causing Johne's disease that sometimes is present in raw milk. The research was conducted last year to assure federal health officials, and the public, that widely used high temperature, short time pasteurization does, in fact, destroy the Johne's bacterium. Working together to defend dairy, NMPF and DMI - along with considerable support from processors represented by the International Dairy Foods Association (IDFA) and MilkPEP - strongly and effectively responded to inquiring news reporters that Cohen had twisted facts and misrepresented the science to alarm consumers and advance his own agenda. Then, a few weeks later, the animal rights activist group, People for the Ethical Treatment of Animals (PETA), started its own media campaign against dairy. The group claimed that laws declaring milk Wisconsin's official beverage are racist because they discriminate against minorities who supposedly have a harder time digesting lactose. Again, the dairy industry was quick to respond that these preposterous allegations have no foundation. So what can our industry do?* It does no good - and can do harm - to get carried away in our reaction. While we don't want to ignore attacks on dairy products, it only confuses consumers more if we respond in a heavy-handed way that gives greater exposure and opportunity to advocates peddling "junk science." * The dairy industry needs to coordinate its response. While we are blessed in having science, facts and reputable experts on our side, we must be careful how and when we present this information in order to deliver a consistent, coordinated message. To this end, National milk and DMI, which manages the national dairy checkoff, have been working closely. DMI monitors more than 2,000 consumer publications and leading health professional journals, as well as dozens of news broadcast outlets each day to watch for any attacks against dairy. More than 40 trained dairy communications professionals in the Dairy Resource Network work behind the scenes with influential consumer media to ensure that media have access to credentialed professionals and understand the difference between sound science and "junk science" being pedaled by dairy detractors. * Finally, we must never get comfortable in our assumptions. Just because we believe in our
products, it doesn't mean that others will always share that faith. We
must be effective in spreading the truth to consumers because there are
others who are all too willing to manipulate information to paint dairy
